Cannabis is very sensitive to heat, is fat-soluble so needs to be cooked with fats or oils, and edibles in general can affect one person differently to another. So, maybe it’s best to try this out on a day when you don’t have a big presentation at work or have to operate heavy machinery, just to err on the side of caution.

At first, things seemed to be going well for the makers of weed-infused foods and consumer demand was sky high, but things took a turn for the worst last year when some states began banning the sale of edibles on the advice of the Food and Drug Administration.
Since then, enthusiasts in those states have had to find ways to explore their cannabis culinary interests elsewhere and many are opting to explore the DIY method. Cooking with cannabis might seem daunting at first, but IRL it’s easy enough. Really, there are only two golden rules you need to concern yourself with when embarking on your cannabis cuisine journey. Follow them and you’ll massively boost your chances of success and could find yourself making cannabis omelettes a regular staple.
Golden Rule 1. Use Fats
THC is soluble in fats and oils. This means that if your recipe doesn’t include either, you won’t feel the effects of the THC at all. Coconut oil is widely accepted as one of the best oils to use thanks to its fat content, but butter, cream, milk and olive oil will all work well too.
Golden Rule 2. Lower temperatures
The chemicals in cannabis don’t like too much heat, so cooking them at or above 390 degrees Fahrenheit isn’t a good idea. Keep the cooking slow and steady to get the best effects from your food.
Weed Omelette Recipe (serves 4)
- 8 large free-range eggs
- 1 full pack of pancetta (skip for vegetarian option)
- 2 teaspoons of cannabutter (like this one from Enjoyable Edibles)
- ¼ cup of grated mature cheddar cheese
- Freshly ground pepper and chopped parsley to taste
- A medium sized saucepan
- A deep bowl
- A whisk
- A cheese grater
- Chopping board and sharp knife
- A grill
- Pre-heat oven to 425 F degrees
- Chop up your pancetta and parsley roughly. No need to be a perfectionist here. We’re going for a rustic vibe.
- Grate your cheese into a pile and place beside the pancetta and parsley on your chopping board.
- Whisk your eggs in the bowl and season generously with pepper (the pancetta will provide the salt).
- Heat your saucepan over a medium heat and add the cannabutter. When it’s sizzling (but not burning, add your chopped pancetta to the pan and briskly stir for 1-2 minutes, or until it’s nice and crispy.
- Add the eggs to the pan and then sprinkle the cheese on top.
- After a minute, remove the pan from the burner and place it in the oven so that the cheese gets nice and bubbly. Keep a close eye on it and it should be ready to devour in 2-3 minutes.
